Artichoke Guacamole

Artchoke Guacamole

2 large avocados, diced (about 2 cups)
Juice from 2 limes (about 1/4 cup)
1 cup chopped marinated
artichoke hearts
1/4 cup toasted pine nuts
1/4 cup chopped cilantro
1/4 cup crumbled feta cheese

Between the creamy feta and flavor-popping pine nuts, avocado and artichoke seem almost understated in this upscale taste-storm. Make this when you want to impress someone.

In a medium bowl, combine the avocados, lime juice, artichoke hearts, pine nuts, and cilantro with a large spoon. Season to taste with salt and pepper. Sprinkle the feta over the avocado mixture and serve immediately with tortilla chips.

Make about 3 3/4 cups.
