Ingredients:
4 pieces Italian country bread loaf, Eeach about 8 inches long
Extra virgin olive oil for drizzling Red or white wine vinegar for drizzling Freshly ground black pepper 1/2 cup grated parmesan cheese 8 thin slices coppa 8 thin slices Genoa salame 8 thin slices sopressata 8 thin slices mortadella 16 slices smoked mozzarella or smoked provolone cheese 12 paper-thin slices red onion 32 slices roasted bell bepper Serves 4

A delicatessen classic, this popular Italian-American sandwich is aptly named: You have to be heroic to finish it. Its origin lies in the southern Italian immigrant community of late-nineteenth-century New York, where workers satisfied their noontime hunger with a taste of home. Split the bread pieces so they open fairly flat, like a book, but don't cut all the way through. Drizzle the cut sides of all the bread pieces with olive oil and vinegar and season with pepper. Sprinkle each cut side with 1 tablespoon of the Parmesan. Layer all of the meats and the cheese slices on one-half of the bread pieces, and top each stack with 3 onion slices and 8 red pepper slices. Fold over to close the sandwiches and serve.
