Indian Curry Dressing

Indian Curry Dressing

Ingredients:
3/4 cup plain yogurt
1 teaspoon honey
2 tablespoons fresh lime juice
2 medium garlic cloves, minced
2 tablespoons coarsely chopped fresh cilantro
1/4 teaspoon ground cumin
1 teaspoon curry powder
3/4 teaspoon salt
Dash of cayenne pepper

This slightly spicy dressing can be used as a marinade for chicken or lamb, as well as a sauce for dipping vegetables or for topping steamed or roasted new potatoes.

In a medium bowl, combine all the ingredients. Taste and add more salt if needed. Indian Curry Dressing keeps refrigerated for 5 to 7 days.

Makes 1 cup
